Hyssop

- Hyssopus officinalis or hyssop is a shrub in the Lamiaceae or mint family
- native to Southern Europe, the Middle East, and the region surrounding the Caspian Sea.
- used in traditional herbal medicine as an antiseptic, cough reliever, and expectorant (Hyssop tea)
- beautiful flowers pollinators love.
- hardy perenniel to zones 3-10
- (in biblical use) a wild shrub of uncertain identity whose twigs were used for sprinkling in ancient Jewish rites of purification.

Grow Hyssop

- plant seeds in a small jar/planter sunny location inside or outside after all danger of frost has passed.
- plant 7-10 seeds per jar 1/4in deep
- Use water spray bottle to keep soil moist to promote effective germination
- seedlings emerge in 7-14 days
- thin to one plant per 12 in apart (I like to grow them closer together and harvest more often.
- once the stems have grown 6 – 8 inches tall, you can begin harvesting
- harvest when buds begin to form up until frost outdoors

How to Dry Hyssop

- once the stems have grown to 6 – 8 inches tall, you can begin harvesting for drying purposes.
- bundle stalks together, I use a pipe cleaner to bundle.
- hang the stalks upside down until leaves are dried out completely.
- the process can take a couple of weeks to a month.
- once dry, break the leaves and flowers into small bits, discarding stems as you go.
- store in air-tight containers in the freezer for maximum freshness.
